My (other) best friend from high school is an amazing cook from a family of chefs. Last time I went to visit her in SF, I suggested we make dinner instead of going out and was NOT disappointed. She also put me onto Bon Appetit’s Rent Week series (aka inexpensive, simple food for when cash is low), which I’m now obsessed with. We followed this recipe and ate it over white rice, with red wine on the side ;). We also added a few additional vegetables other than carrots. We roasted the carrots, broccoli, golden beets, onions and broccoli with a little olive oil and red pepper flakes. Simple and amazing. You will want to make it again, trust me.
